Green Veggie Smoothie




Back in July 2012 when I was having some minor health issues and just not feeling myself, I decided to make some drastic changes and cut all carbs, dairy and meat from my diet and go totally veggie. I looked through books and online recipe sources for some yummy eats, but kept coming across various recipes for a green drink or smoothie. I tried a few, but just didn't like the taste. After a few quacky experiments and flavor tastings, I put together one that I just fell in love with. Even though I only spent a few weeks on my no carb, dairy and meat diet, I have not gotten rid of my green drink. I still make it every morning, and drink it along side two pieces of wheat toast (lots of butter.)

Ingredients:
1 - 1.5 cups Unsweetened Almond Milk
1 green apple
1 lime
1 avocado
1 small cucumber or 1/2 large cucumber
1 cup raw spinach (packed full)
1 tomatillo
1 pack of Stevia
1 Tbsp. Flax seeds (optional)
water as needed ( 4 - 8 ounces)

 
Peel the lime, core the apple, peel avocado and remove the pit, peel cucumber. Cover up the blades of the blender with almond milk (1 - 1.5 cups.) Dice apple, cucumber, tomatillo, avocado and lime and put it in the blender, add spinach, flax seeds, and Stevia and blend for about 1 - 1 1/2 minutes or until it becomes a smooth liquid. If the mixture is too thick, add 4 - 8 ounces of water as needed. Or add ice for a refreshing, cold smoothie.
